No So Crabby Cakes
These vegetarian patty-cakes are made out of Quinoa. I made a lot and used the leftovers to create these small savory treats.
You will need:
quinoa (cooked)
cheese (I used a Gruyere/Cheddar blend & herbed Feta for an extra kick)
an onion (diced, it's up to you how much you use)
garlic ( 1 or 2 cloves grated or finely diced)
eggs (3 to 4)
bread crumbs (I made mine with a baguette, toasted then tossed in a blender)
hint of salt & fresh black pepper
chives (chopped)
optional
whatever you want
herbs, veggies (diced), cheese, crushed nuts, brown rice you name it...
Toss everything in a bowl and combine with your hand until the consistency is stong enough to form a ball. Form balls... small or big and then pan fry with some kind of oil... I used olive oil.
Cucumber Creamy Sauce
cucumber (extract seed area to limit moisture)
herbs - I used parsley, dill would work
sour cream
mayo
salt & pepper
garlic - diced
you can use edamame, avocado, small zuchinni (so there is more green) if you prefer
